Ingredients:

– 2 cans of tuna (albacore or chunk light)
– 1/2 cup mayonnaise
– 1/4 cup chopped scallions (white and green parts)
– 2 tablespoons capers, drained
– 2 teaspoons grated lemon zest
– 2 tablespoons freshly squeezed lemon juice
– Kosher salt and freshly ground black pepper
– 4 large slices of whole wheat bread
– 1/2 cup prepared hummus
– 8 slices of cucumber
– 8 slices of tomato
– 1/2 cup baby arugula

Instructions:

1. In a medium bowl, mix together the tuna, mayonnaise, scallions, capers, lemon zest, and lemon juice. Season with salt and pepper to taste.
