Portuguese King Cake or Bolo Rei is a traditional holiday cake in Portugal that is typically served during Christmas and Epiphany. This cake is a rich, sweet and fruity cake that has various nuts and dried fruits topped with a crown of sugar and glazed fruits. In this article, we’ll be sharing a recipe for Portuguese King Cake from Pabs Kitchen.

Ingredients:

– 1 cup of all-purpose flour
– ¼ cup of warm milk
– ½ cup of granulated sugar
– 4 eggs
– ½ cup of butter
– 2 teaspoons of active dry yeast
– 1 teaspoon of salt
– 1 teaspoon of grated lemon peel
– 1 teaspoon of grated orange peel
– 1 tablespoon of vanilla extract
– 1 teaspoon of ground cinnamon
– 1 teaspoon of ground nutmeg
– ⅔ cups of candied fruit peels
– ½ cup of raisins
– ½ cup of almonds
– ½ cup of hazelnuts
– 1 egg yolk
– 1 tablespoon of water
– Colored sugar and glazed fruits (optional)

Instructions:

1. Preheat the oven to 350°F and grease a large cake pan with butter.

2. In a small bowl, dissolve the yeast and sugar in warm milk and let it sit for 5 minutes.

3. In a large mixing bowl, whisk 4 eggs with sugar until it’s light and fluffy.

4. In another bowl, mix flour, salt, cinnamon and nutmeg.

5. Melt butter and stir it into the dry ingredients along with lemon zest, orange zest and vanilla extract.
