• 2 cups fresh strawberries, hulled and chopped

• 1 cup heavy cream
• 1/4 cup powdered sugar

Directions:
1. In a blender or food processor, puree the strawberries until they are smooth.
2. In a small saucepan, combine the strawberry puree, granulated sugar, and lemon juice. Heat the mixture over low heat, stirring occasionally, until the sugar is completely dissolved.
3. In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes to soften.
4. Stir the strawberry mixture into the softened gelatin until the gelatin is completely dissolved.
5. In a large bowl, beat the heavy cream and powdered sugar on high speed until stiff peaks form.
