Palkova, also known as Palgova or Paal Kova, is a traditional South Indian milk sweet that is loved by everyone. It is made by simmering milk and sugar together until the milk thickens and turns into a solid mass. Palkova is a delicious and easy-to-make dessert that is perfect for any occasion. Follow the recipe below to make this classic Indian sweet at home.

Ingredients:
– 2 liters of full-fat milk
– 1 cup of sugar
– 1/4 tsp of cardamom powder
– A pinch of saffron
– 1 tbsp of ghee

Instructions:
1. Pour the milk into a heavy-bottomed pan and bring it to a boil over medium heat.
2. Once the milk comes to a boil, reduce the heat to low and stir the milk continuously to prevent it from burning or sticking to the bottom of the pan.
3. Simmer the milk until it reduces to one-third of its original volume. This will take about 1-1.5 hours.
4. Once the milk has reduced, add sugar, cardamom powder, and saffron to the pan and mix well.
5. Continue to cook the mixture over low heat while stirring constantly until the milk solidifies and turns into a thick, creamy mass.
6. Add a tablespoon of ghee to the pan and mix it well with the palkova.
7. Turn off the heat and let the palkova cool down to room temperature. You can serve palkova as is, or you can shape it into small balls or squares.
