– 1 tablespoon warm water
– 4 cups all-purpose flour, sifted
– 1 teaspoon salt
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/2 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1 teaspoon pure vanilla extract
– 1 tablespoon finely grated lemon zest
– 1 tablespoon finely grated orange zest
– 1/4 cup unsalted butter, melted
– 1 cup packed light brown sugar
– 1 tablespoon ground cinnamon
– 1/4 cup all-purpose flour, sifted
– 1/4 cup heavy cream
– 1/4 cup milk
– 1 large egg yolk
– 1 large egg
– 1/2 cup confectioners’ sugar
– 2 tablespoons milk
– Purple, green, and yellow colored sugar


1. In a small saucepan, heat 3/4 cup milk, sugar, and butter until just boiling. Set aside to cool to room temperature.
2. In a small bowl, add the yeast and warm water. Let stand until the yeast is dissolved and becomes bubbly, about 5 minutes.
3. In a large mixing bowl, sift together the flour, salt, cinnamon, nutmeg, baking powder and baking soda.
4. Add the yeast mixture and the cooled milk mixture to the flour mixture. Mix until the dough starts to come together. Add the eggs, vanilla extract, lemon zest and orange zest. Mix until the dough is fully combined.
5. Turn the dough out onto a lightly floured surface and knead until it forms a smooth ball, for about 10 minutes. Place the dough into a large, lightly greased bowl and cover it with a lightly greased piece of plastic wrap. Let it rest in a warm place until the dough has doubled in size, for about 1 hour.
6. Preheat the oven to 375 degrees F. Grease a large baking sheet with cooking spray.
7. In a small mixing bowl, mix together the melted butter, brown sugar, cinnamon and flour until it forms a paste-like mixture.
8. Roll the dough out into a large rectangle, around 28-30 inches in length.
9. Spread the brown sugar mixture over the dough, leaving a 1-inch border along the sides of the rectangle.
10. Roll the dough from the long side, jelly-roll style until it forms a long cylinder. Form the cylinder into a ring, pinching the ends of the dough together to seal.
11. Place the ring onto the baking sheet and let it rest in a warm place until it has risen slightly, for around 30-40 minutes.
12. In a small mixing bowl, whisk together the cream, milk, egg yolk, and egg. Brush the mixture over the King Cake gently and evenly, taking care not to press too hard and deflate the cake.
13. Bake the cake for around 25-30 minutes, until the cake is golden brown and sounds hollow when tapped.
14. In a small mixing bowl, mix together the confectioners’ sugar and milk until smooth.
15. Once the cake is cool, drizzle the confectioners’ sugar glaze over the top of the cake and sprinkle with the purple, green, and yellow colored sugar.
