9. Cover the dough with a clean, damp towel and let it rise in a warm place for another 30-45 minutes.

11. Beat the egg yolk and brush it over the top of the dough.
12. Sprinkle the sugar over the top of the dough.
13. Bake the Rosca de Reyes for 30-40 minutes, or until the top is golden brown.
