As we continue to navigate the challenges of the COVID-19 pandemic, many of us are spending more time at home and are looking for quick and easy dinner ideas. Luckily, Marion’s Kitchen has got you covered with three delicious Asian dinner options that can be made in just 10 minutes!

1. Miso Udon Noodles

– 2 packs udon noodles
– 2 tbsp miso paste
– 1 tbsp mirin
– 1 tbsp soy sauce
– 1 tsp sesame oil
– 2 cups boiling water
– 1-2 green onions, sliced
– 1-2 tsp grated ginger
– 2-3 shiitake mushrooms, sliced
– Optional toppings: soft boiled egg, nori seaweed, sesame seeds

1. Cook the udon noodles according to package instructions and set aside.
2. In a separate bowl, mix together miso paste, mirin, soy sauce, and sesame oil.
3. Pour boiling water into the bowl and stir until the miso paste is fully dissolved.
4. Add the sliced green onions, grated ginger, and shiitake mushrooms to the bowl.
5. Divide the cooked udon noodles into two bowls and pour the miso soup over the top.
6. Top with optional toppings if desired and enjoy!

2. Thai Chicken Stir Fry

– 2 chicken breasts, thinly sliced
– 1 red bell pepper, sliced
– 1 yellow onion, sliced
– 2 tbsp vegetable oil
– 1 tbsp fish sauce
– 1 tbsp soy sauce
– 1 tbsp oyster sauce
– 1 tsp sugar
– 1-2 red chilies, sliced
– 2 garlic cloves, minced
– Fresh basil leaves for garnish

1. Heat vegetable oil in a wok or large skillet over high heat.
2. Add sliced chicken breasts and stir-fry until browned on all sides.
3. Add sliced red bell pepper and yellow onion, and continue to stir-fry for 1-2 minutes.
4. In a bowl, mix together fish sauce, soy sauce, oyster sauce, and sugar.
5. Add the sauce mixture to the wok and stir until the chicken and vegetables are coated.
6. Add sliced red chilies and minced garlic and stir-fry for an additional minute.
7. Serve immediately with freshly chopped basil leaves.

3. Japanese Tuna Salad

– 1 lb fresh tuna, cubed
– 2 tbsp soy sauce
– 2 tbsp mirin
– 1 tbsp sesame oil
– 1 tbsp grated ginger
– 1 tbsp lime juice
– 1 tbsp honey
– 1-2 green onions, sliced
– 1-2 tsp sesame seeds for garnish
– Optional toppings: avocado, cucumber, lettuce

1. In a bowl, mix together soy sauce, mirin, sesame oil, grated ginger, lime juice, and honey.
2. Heat a non-stick skillet over medium-high heat.
3. Add cubed tuna to the skillet and cook for 1-2 minutes on each side until just seared.
4. Add the sauce mixture to the skillet and stir until the tuna is fully coated.
5. Allow the tuna to cook for an additional 1-2 minutes until the sauce thickens and appears slightly caramelized.
6. Serve immediately with sliced green onions and sesame seeds for garnish.
7. Optional toppings include sliced avocado, cucumber, or lettuce wraps.
