– 2 cups unsalted butter
– 2 cups white granulated sugar
– 8 large eggs
– 4 cups all-purpose flour

– 1 lb. candied fruit mix
– 1 lb. chopped walnuts

1. Preheat your oven to 300°F (150°C). Grease and line two 9-inch round cake pans with parchment paper.
2. Beat the butter and sugar in a large bowl until light and fluffy, using an electric mixer or stand mixer.
3. Add the eggs, one at a time, and continue to beat until they are fully incorporated.
4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the butter-sugar-egg mixture, and mix until fully combined.
5. Add the vanilla and almond extracts, followed by the cup of brandy. Fold in the mixed dried fruit, candied fruit mix, and chopped walnuts.
6. Divide the batter evenly between the two prepared pans.
7. Bake in the preheated oven for 3 hours or until a toothpick or skewer inserted into the center of the cake comes out clean.
8. Remove the cakes from the oven and let them cool in the pans for 10-15 minutes before turning them out onto a wire rack to cool fully.
9. Once the cakes are cool, wrap them in plastic wrap and store them in the refrigerator for 2-3 days.
10. When ready to serve, brush the cakes with additional brandy to enhance their flavor and moisture.
