Original Ras Malai Cake (Bengali Dessert) easy recipe using ricotta cheese by Manjula Yummy Recipes

Ras Malai Cake, a traditional Bengali dessert, has been in demand lately due to its unique taste and texture. This dessert is made from cottage cheese, soaked in sweet, refreshing syrup, and then decorated with slices of almonds and silver leaf. Today, we are sharing a simplified recipe for Ras Malai Cake by Manjula using ricotta cheese, a much easier alternative. Let’s get started!


For the Cake
– 1 ½ cups all-purpose flour
– 2 tsp baking powder
– 1 cup ricotta cheese
– ¾ cup unsalted butter
– 1 ¼ cups granulated sugar
– 3 large eggs
– 1 tsp vanilla extract
– ½ cup whole milk

For the Ras Malai
– 2 cups whole milk ricotta cheese
– 3 cups whole milk
– 1 cup granulated sugar
– ½ tsp cardamom powder
– 1 tbsp sliced almonds
– 1 tsp silver leaf (optional)


For the Cake
1. Preheat oven to 350F and butter a 9-inch round baking pan.
2. In a bowl, mix flour and baking powder and set aside.
3. In a separate bowl, cream butter, sugar, and vanilla until well combined.
4. Add eggs one at a time and mix well.
5. Next, add ricotta cheese and mix until well incorporated.
6. Gradually add in the flour mixture in three parts, alternating with a splash of milk each time. Mix until just combined.
7. Pour batter into the baking pan and smooth the top.
8. Bake for 35-40 minutes or until a toothpick inserted comes out clean. Cool it completely.

For the Ras Malai
1. In a saucepan, add milk, ricotta cheese, and sugar. Mix well.
2. Heat on medium heat, stirring occasionally, until the sugar is dissolved, and the mixture is heated through, around 15-20 minutes.
3. Turn off the heat and add the cardamom powder. Mix well.
4. Let the mixture cool for 5-10 minutes.
5. Remove the cake from the baking pan and place it on a serving plate.
6. Use a fork to poke holes in the top of the cake.
7. Slowly pour some of the milk mixture over the top of the cake, allowing it to soak in.
8. Use a spatula to spread the excess milk over the sides of the cake as well.
9. Repeat this process until all the milk mixture has been used.
10. Sprinkle sliced almonds over the top of the cake and decorate with silver leaf if desired.
11. Chill in the refrigerator for at least one hour.
12. Serve chilled and enjoy!
