Excellent RICOTTA CHEESE RASAMALAI Recipe| Easy Dessert | Amura’s Kitchen Delectable Cuisine




Rasamalai is a popular Indian dessert that is loved and enjoyed by many. It consists of small, flattened, discs of chenna (cheese) that are soaked in thickened, sweetened milk, and garnished with cardamom and pistachios. Traditionally, this dessert is made using chenna that is made from scratch, but in this recipe, we will be using ricotta cheese to make the process easier and save time.

Ingredients:
– 1 can of ricotta cheese
– 1 cup of milk powder
– 1 egg
– 1 tsp of baking powder
– 1 cup of sugar
– 5 cups of milk
– 4-5 cardamom pods
– 1 tbsp of chopped pistachios

Instructions:

1. Preheat your oven to 350 degrees F.

2. In a large mixing bowl, combine the ricotta cheese, milk powder, egg, and baking powder. Mix well to form a smooth dough-like consistency.

3. Form the dough into small, flattened discs, and place them onto a baking sheet lined with parchment paper.

4. Bake the discs for 20-25 minutes or until lightly golden in color.

5. While the discs are baking, prepare the sweetened milk by adding the sugar and milk into a large pot.

6. Mix well and bring the milk to a boil.

7. Reduce the heat to low and let it simmer for 10-15 minutes or until the milk thickens to a slightly thicker consistency.

8. Crush the cardamom pods and add them to the milk for flavor.

9. Once the milk is ready, remove it from the heat, and let it cool down for a few minutes.

10. Add the baked ricotta cheese discs to the sweetened milk, making sure they are fully submerged.

11. Let them soak for at least an hour, or until they become soft and sponge-like in texture.

12. Garnish with chopped pistachios and serve chilled.
