Easter Simnel Cake Recipe & Egg Throwing Competition

9. Leave the cake to cool in the tin for about 15 minutes, then turn it out onto a wire rack to cool completely.

10. Brush the top with jam or marmalade, then roll out a layer of marzipan to fit the top of the cake.

12. To finish, toast the marzipan under a hot grill, then leave to cool before serving.
