Vegan Lentil Meatloaf: A Delicious and Nutritious Plant-Based Meal

Ingredients:

-1 cup cooked green lentils
-1/2 cup gluten-free oats
-1/2 cup chopped onion
-1/2 cup chopped red bell pepper
-1 tbsp olive oil
-2 tbsp tomato paste
-1 tbsp Dijon mustard
-1/4 cup nutritional yeast
-1/4 cup vegan worcestershire sauce
-1/2 tsp smoked paprika
-1/2 tsp garlic powder
-1/2 tsp salt
-1/4 tsp black pepper
-1/4 cup ketchup

Instructions:

1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8×4 inch loaf pan.

2. Cook green lentils according to package directions and set aside.

3. Pulse gluten-free oats in a food processor until finely ground.

4. In a skillet on medium heat, sauté onions and red bell peppers in olive oil, until they are softened.

5. In a large bowl, combine cooked lentils, ground oats, sautéed onions and bell peppers, tomato paste, dijon mustard, nutritional yeast, vegan worcestershire sauce, smoked paprika, garlic powder, salt and pepper. Mix well.

6. Transfer mixture to the greased loaf pan, and smooth the top.

7. Spread ketchup over the top of the lentil mixture.

8. Bake for 45-50 minutes, or until the top is lightly browned and the lentil meatloaf is firm.

9. Remove from oven and allow the lentil meatloaf to cool for 10-15 minutes before serving.
