Plant-Based Meatloaf | Veggie-Packed
Meatloaf is a classic American dish that typically includes ground beef, breadcrumbs, and various spices. This plant-based version of meatloaf is veggie-packed and delicious. – 1 can of black beans
– 1 cup of cooked quinoa
– 1 cup of grated carrots
– 1 cup of chopped celery
– 1 onion, diced
– 1 tsp of garlic powder
– 1 tsp of cumin powder
– 1 tsp of smoked paprika
– 1 tsp of dried thyme
– 1/2 cup of ketchup
– 1/4 cup of BBQ sauce
– 1/4 cup of breadcrumbs (gluten-free, if necessary)
– Salt and pepper, to taste
1. Preheat your oven to 375°F (190°C).
2. Drain and rinse the can of black beans and mash them with a potato masher or fork until they are relatively smooth.
3. In a large mixing bowl, add the mashed black beans, cooked quinoa, grated carrots, chopped celery, diced onion, garlic powder, cumin powder, smoked paprika, dried thyme, breadcrumbs, and salt and pepper. Mix well until everything is combined.
4. Add the ketchup and BBQ sauce to the mixture and mix until well combined.
5. Transfer the mixture to a greased loaf pan and smooth out the top with a spatula.
6. Bake for 45-50 minutes, or until the top is slightly golden and a toothpick inserted into the center comes out clean.
7. Remove the meatloaf from the oven and let it cool for about 10 minutes before slicing and serving.
