Simnel Cake Recipe: A Traditional & Easy Easter Recipe/Bake

When it comes to Easter, many people associate this holiday with chocolates and bunnies, but there is one particular traditional food that takes center stage during this season – the Simnel Cake. A Simnel Cake is a fruit cake that has been traditionally made for Easter celebrations in the UK for centuries. It is a delicious cake that is both easy to make and beautiful to look at, and it is the perfect dessert to celebrate Easter with your family and friends.

Here is a simple and easy recipe that you can use to make your own Simnel Cake for Easter:

Ingredients:

– 250g unsalted butter, at room temperature
– 250g caster sugar
– 4 free-range eggs
– 300g self-raising flour
– 1 tsp mixed spice
– 200g currants
– 200g sultanas
– 100g glacé cherries
– 50g candied peel
– Zest of 1 orange
– 1 tbsp milk
– 500g marzipan
– 2 tbsp apricot jam
– Edible flowers, to decorate (optional)

Instructions:

1. Preheat your oven to 150°C and grease and line a 20cm round cake tin.

2. In a large mixing bowl, cream together the butter and sugar until pale and fluffy.

3. Add the eggs one at a time, beating well after each addition.

4. Sift in the flour and mixed spice, and fold into the mixture until fully incorporated.

5. Stir in the currants, sultanas, glacé cherries, candied peel, orange zest, and milk until well combined.

6. Spoon half of the mixture into the prepared cake tin.

7. Roll out 300g of the marzipan into a circle that is slightly smaller than the diameter of the tin.

8. Place the marzipan circle on top of the cake mixture in the tin.

9. Spoon the remaining cake mixture on top of the marzipan.

10. Bake the cake for 2 hours until it is golden and a skewer inserted into the center comes out clean.

11. Allow the cake to cool in the tin for 10 minutes before turning it out onto a wire rack to cool completely.

12. Once the cake has cooled, roll out another 200g of the marzipan into a circle that is the same diameter as the cake.

13. Melt the apricot jam in a small pan and brush it over the top of the cake.

14. Place the marzipan circle on top of the jam and use a knife to crimp the edges.

15. Roll out the remaining marzipan into 11 small balls.

16. Arrange the marzipan balls on top of the cake and use a blowtorch to lightly toast them.

17. Decorate the cake with edible flowers (if using).
