Ingredients Required:
For the Doodh Dulari balls:
– 1 cup of Semolina (Sooji)
– 1/4 cup of Water
– 1/4 tsp of Orange food color
– 1/4 tsp of Cardamom Powder
– 2 tbsp of Ghee (Clarified Butter)
For the Milk Mixture:
– 1 liter of Milk
– 4-5 tbsp of Sugar
– 1/4 tsp of Cardamom Powder
– 1/4 tsp of Kewra Essence
– Finely sliced Pistachio and Almonds for garnishing
Method:
1. Begin by mixing Semolina, water, and orange food color in a bowl.
2. Gradually mix in cardamom powder and ghee; knead the mixture into a dough. Shape the dough into small marble-sized balls.
3. Bring a pot of water to a boil and add the Semolina balls. Cook for five minutes, stirring occasionally, until the balls are cooked through. Be sure not to overcook the balls.
4. Pour the cooked Semolina balls into a strainer and place them under running cold water to cool. Set them aside to chill.
5. In a separate pot, heat the milk over medium heat until it comes to a boil. Reduce the heat and add sugar, cardamom powder, and Kewra essence. Stir well until the sugar dissolves and simmer over low heat for 15-20 minutes.
6. Add the chilled Semolina balls, and let them simmer in the milk mixture for 5-10 minutes or until they become transparent and creamy.
7. Remove the pan from the heat and allow the Doodh Dulari to cool.
8. Once the Doodh Dulari has cooled, pour it into a serving bowl and refrigerate for at least an hour.
9. Garnish the Doodh Dulari with finely sliced pistachio and almonds and serve chilled.
