- 1/2 cup (110 g) packed light brown sugar
- 1/4 cup (50 g) granulated sugar
- 1 large egg
- 1 teaspoon (5 ml) vanilla extract
- 1 1/4 cups (150 g) gluten-free all-purpose flour
- 3/4 teaspoon (3.75 ml) baking soda
- 3/4 teaspoon (3.75 ml) xanthan gum (omit if your gluten-free flour blend already contains it)
- 1/2 teaspoon (2.5 ml) baking powder
- 1/2 teaspoon (2.5 ml) salt
- 1 cup (170 g) semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (177°C). Line two baking sheets with parchment paper.
- Cream the softened butter and sugars together in a large bowl until light and fluffy. Beat in the egg and vanilla.
- In a separate bowl, whisk together the gluten-free flour, baking soda, xanthan gum (if needed), baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just blended. Stir in the chocolate chips.
- Drop the cookie dough by heaping tablespoonfuls (about 3 tablespoons or 45 g each) onto the prepared baking sheets, leaving 2 inches (5 cm) of space between each cookie.
- Bake for 9 to 11 minutes, until lightly golden brown. Let cool on the baking sheets for several minutes before transferring to a wire rack to cool completely.
