The Epiphany, also called La Fête des Rois, is a French holiday that celebrates the arrival of the Three Wise Men who brought gifts to the baby Jesus. Traditionally, it is celebrated on January 6th, but now in France, this holiday is celebrated throughout the month of January. This joyous event comes with a special tradition of eating Galette des Rois, the King’s Cake, a puff pastry cake filled with frangipane, a sweet almond paste.

To prepare this delicious pastry, follow this easy recipe:

Ingredients
– 2 puff pastry sheets
– 100 grams butter, softened
– 100 grams granulated sugar
– 2 eggs
– 100 grams almond flour
– 1 teaspoon vanilla extract
– 1 egg yolk for brushing
– A small trinket (can be a small figurine or a coin wrapped in aluminum foil)

Instructions
1. Preheat oven to 180°C
2. In a bowl, cream butter and sugar until light and fluffy
3. Add one egg at a time to the mixture, whisking well after each addition.
4. Add the almond flour and vanilla extract and mix well
5. Roll out the puff pastry sheet and place it on a baking sheet
6. Pour the filling in the center of the pastry sheet, leaving a 2cm border
7. Insert the trinket in the filling
8. Brush the border with egg yolk
9. Roll out the second puff pastry sheet and place it over the filling, sealing the edges
10. Brush the top with egg yolk
11. Use a knife to make small cuts on the surface of the pastry
12. Bake for 30 minutes or until golden brown.
